It’s a good question. Fiber plays such an important role in our health, thanks in no small part to our microbes. And it is an integral part of so many amazing foods and cuisines. Yet we often see it as a bland obligation.

I talked with Edith Zimmerman of New York Magazine‘s The Cut about this important–but often overlooked–part of our diets. And she agreed that it’s time we take another look at fiber.
